Dow Food Solutions develops plant-based ingredients to cut down fat

Dow Food Solutions has developed two plant-based functional ingredients, which will help food manufacturers to reduce the amount of fat in their products.

The ingredients include Wellence, which is aimed at fat reduction in food gums, and Methocel for meat applications.

Dow Food Solutions market manager Christopher Spontelli said: “These technologies offer a healthier version of our favorite fried snacks and meat without losing the full-fat flavor and crisp bite that we know and love.

The offerings will help manufacturers target health-conscious consumers in the US.

Wellence can be added to batter or coating to cut fat and associated calories by up to 35% or more, by reducing the oil uptake during frying, while still maintaining the sensory profile, flavour and texture of the product.

Methocel was created to help manufacturers produce convenient, healthier and more cost-effective meat products and analogues.

The ingredient boosts stability, bite and texture at high and low temperatures.
