Corbion Caravan adds Function Plus 250W to egg white replacers line

Corbion Caravan has expanded its Function Plus product line with Function Plus 250W, which has been created especially to replace up to 30% of egg whites in angel food cakes.

Corbion Caravan manager for sweet baked goods Kathy Sargent said: "Function Plus 250W allows Corbion Caravan customers to sharply reduce the amount of egg whites used in chemically leavened angel food cake formulas, while maintaining the taste and consistency that defines a slice of delicious angel food cake."

The company claims that angel food cakes, when prepared with Function Plus 250W, maintain their volume, structure, resilience and texture.

Sargent added: "Function Plus 250W is easy to handle and scale, and doesn’t require reconstitution.

"Customers can use it to replace either powdered or liquid egg whites, and no special equipment is required. It’s a drop-in replacement that helps our customers cope with today’s high prices."

With the prices of eggs and egg products increasing, the bakery industry is exploring ways to cut costs down whilst producing sweet baked goods the way consumers demand.

The launch of Function Plus 250W comes following the recent roll out of Function Plus 150W.

In August, the company introduced Function Plus 150W, a solution that enables customers to replace 50-100% of egg whites in sweet baked goods.

Sergeant had stated then: "With Function Plus 150W, Corbion Caravan customers can easily lower their product costs, while still producing delicious baked goods that have the resilience, strength, volume and structure their consumers expect."

Function Plus 150W can be easily handled and scaled, and used to replace both liquid and powdered egg whites.

The egg white replacer can be added to the mixer with other dry ingredients with no special equipment required.
