ADM Cocoa develops fillings with long shelf-life

US-headquartered ADM Cocoa, a producer of cocoa, chocolate and confectionery ingredients, has developed a range of fillings that combine an ‘indulgent taste’ with a shelf-life of between six and nine months.

According to the company, it has utilised lipid technology to develop fillings with low moisture content for use in products such as filled biscuits, pralines and éclairs.

They were developed in partnership with the company’s oils and fats division, which enabled it to draw on the group’s combined expertise in oils, fats and chocolate confectionery to develop fillings that blend richness and functionality.

ADM Cocoa technical director Rinus Heemskerk said the confectionery industry is searching for products that give an artisanal sensation, but have an industrial shelf-life.

"This special range of fillings combines the expertise of several ADM divisions to cater to demand," said Heemskerk.

The fillings are available in a number of flavours, including strawberry, orange, fresh yoghurt, custard, chocolate and truffle, in a variety of textures ranging from fluid to firm, and the company is also offering fillings with a cool melting profile that can easily be moulded and cut.
