TOP develops gluten-free bread

Netherlands-based food innovation company TOP has developed a new gluten-free bread that does not contain any starch.

The company said in a statement that bread has lately been under attack because of the high level of carbohydrates and the presence of gluten. However, bread still forms an important part of the daily food consumption for many people, due to which it embarked on developing a bread that would be a healthier alternative to traditional bread.

TOP’s new bread is made of proteins, fibres and gum arabic that hardly contain any carbohydrates.

When combined with yeast and salt, these ingredients created a structure that is both light and elastic, and still had the required amount of firmness.

TOP BV creative director Dennis Favier said: "The bread could do with a bit more taste, but this can easily be solved in the future."

The company partnered with LikeFresh, which develops, builds, and sells patented vegetable, fruit and herb drying technology to develop the bread alternative. The project also received the support of the province of Gelderland.

Currently the company is working on developing the product further and exploring ways of scaling it.

"We hope to find an entrepreneur that is interested in bringing this product successfully to market," added Favier.
