Definition:

Assays refer to the qualitive and quantitive diagnostic procedures used to identify and remove impurities from a food product. Antibody assays correlate characteristics on a pathogen's surface to antibody features in order to register a connection, while nucleic acid assays use a cell's genetic material to detect pathogens.
