Salt consumption above 5-6g/day is considered unhealthy and a source of high blood pressure and a higher level of cardiovascular disorders in the population. So-called industrially added salt has been targeted for reduction, which is a challenge for the industry.
It has been shown that the latest FT-NIR technology can improve predictions and sustain robustness in salt predictions in butter and cheese.
