Rapid and Reliable Salt Prediction with FT-NIR in Food and Dairy Products

The food and dairy industry is faced with upcoming demands from customers and authorities to control and lower NaCl content in food products. Salt consumption above 5-6g/day is considered unhealthy and a source of high blood pressure and a higher level of cardiovascular disorders in the population. So-called industrially added salt has been targeted for reduction, which is a challenge for the industry.

It has been shown that the latest FT-NIR technology can improve predictions and sustain robustness in salt predictions in butter and cheese.
