White Paper: New Light Ice Cream Developed Using ACTILIGHT
Abstract:

From May 2007, nutritional claims on food labelling will have to respect the new European regulation, which is more demanding and selective. Choosing the right ingredient for product formulation is a key to success.

Beghin Meiji's R&D team has recently developed a new formulation for a light ice cream, using ACTILIGHT. In ice cream, sugar and fat are the main sources of energy. Here ACTILIGHT has a multiple purpose: combined or not with a maltodextrin, this fibre can replace part of the fat, while improving the sweet taste.
