Margarine Course for Optimal Product Quality

The annual Gerstenberg Schröder (GS) practical margarine course will take place in September 2007 at the premises of GS, in Brøndby, near Copenhagen, Denmark. GS possess testing, demonstration, training and seminar facilities at this location.

The purpose of this course is to train the participants in principles and practices of crystallisation of oils and fats. During the course the participants will have the opportunity to see and test the functionalities of a flexible GS scraped-surface heat-exchanger pilot plant and control system while testing various recipes.

Product quality is essential and varies from area to area of the world, and therefore the course includes evaluation definitions and principles of fat products. It is also important to use the right technique to obtain a good result when baking Danish pastry, croissants, etc., and this will be illustrated by the GS baker.
