Shortening Production for the Baking Industry

Gerstenberg Schröder is a manufacturer of processing equipment for the production of margarine and shortening and other products. Due to the trend of eating more convenience food, the demand for shortening in the baking industry is increasing.

Shortening is a mixture of edible fat used to tenderise baked products. It is produced without the presence of water or water-soluble ingredients and normally emulsifiers are added in order to enhance the quality of the subsequent application. All-purpose shortening has a wide plastic range which makes it easy to mix in the dough at cold temperatures as well as room temperatures. Shortening also exists as more semi-liquid to liquid types as pumpable versions.

Perfect crystallisation and cooling of shortening can be accomplished by using the Gerstenberg Schröder scraped surface heat exchanger technology. A shortening line will typically consist of our pump - mounted with a nitrogen dosing equipment for aeration of the product - that pumps the shortening product through the scraped surface heat exchanger, the Perfector or the Kombinator. The Perfector/Kombinator for shortening can be mounted with up to 6 chilling tubes with a capacity range from 1,000 kg/hour to 26,400 kg/hour.
