With the keen competition by which the food market is characterised today, it is extremely important for the producers to keep pace with the quickly changing eating habits of the consumers.
Gerstenberg Schröder has therefore developed a flexible modular processing system for production of fine food, such as mayonnaise, dressing, ketchup and sauces.
Mayonnaise is characterised as an oil-in-water emulsion; however, the ingredients can be divided into four phases: oil, egg, vinegar and slurry (water). The latter phase involves water, stabilisers, preservatives, and flavours. For low-fat versions of mayonnaise, and for salad dressing, the slurry can contain starch.
The modular system is constructed on a frame, which makes the installation quick and easy. The plant can produce up to 500 kg/h of mayonnaise (capacity for mayonnaise with up to 50 per cent oil content), and due to the construction of the plant product changes can easily be carried out.
The hygiene is optimal as the production takes place in a closed system. The consistency of the product is ensured and traceability is easy as the process is controlled by the GS Logic control system. The GS Logic system is designed to control, record and document important parameters concerning the complete manufacturing process. The system helps to improve plant performance by creating a consistent processing environment. The GS Logic exists in three versions: GS Logic Basic, GS Logic Advanced and GS Logic Professional; the latter version includes a web-based recipe editor and a web-based report system with traceability for each component controlled by the system.
