In a Food Ingredients Europe ceremony held in London, the UK, on October 30, 2007, Fiberstar, a Minnesota-based research and development company, received one of the world's most coveted and prestigious food ingredient awards. Fiberstar was honored with the Most Innovative Food Ingredient Silver Award for developing its innovative line of all-natural Citri-Fi® products.
In presenting the award to Fiberstar, Henry Dixon, Chairman of the distinguished panel of international judges and commercial director of the international food marketing communications agency of Barrett Dixon Bell stated: "In creating Citri-Fi, Fiberstar has pioneered a novel process that produces a natural ingredient which provides great functionality at low cost using a previously discarded waste stream."
Receiving the award on behalf of Fiberstar were Dale Lindquist, President and CEO, Brock Lundberg, Vice President of Technology and Laura Valverde, Food Scientist.
DRIED ORANGE PULP, GUAR OR XANTHAN GUM PRODUCTS
Citri-Fi products comprise a range of eight patented products containing dried orange pulp, and in some cases either guar or xanthan gum. The large internal surface area of Citri-Fi leaves a large number of bonding sites available for strong hydrogen bonding and makes an amorphous fiber structure that is unique. Citri-Fi has properties that more closely resemble gums or hydrocolloids than other fibers due to its ability to form viscosity and a strong water-binding capacity. However, compared to gums, it has additional benefits which include being non-gummy, easy to hydrate, superior flavor release and reduced formulation costs.
Fiberstar works with global food manufacturers to help them improve the quality and healthfulness of their food products. Citri-Fi products are used to manage moisture, partially replace vegetable and animal fat including trans and saturated fats, improve gel strength, and replace or reduce the use of commonly used chemical additives such as phosphates in a wide array of food products, including bakery, snack, processed meat, sauce, dairy, and beverage products.
